Pattern is an elevated House-style coffee, a higher quality coffee that hits all the chocolate and sweet notes you want from a House coffee. Expect big thick sweet espresso full of fruit and nuts, and praline when milk is added. It is a pleasure to be roasting Abner and Ana’s coffee from their farm Sitio Baixao da Serra in Caldas, Minas Gerais. Brazil is a country famous for its mega-farms and commodity grade coffee, however it produces a wealth of high quality lots from small family-run farms. Getting these coffees to market is difficult as the country is set up for large-scale commodity production and export. It is therefore so exciting to be able to offer this lot, a high quality single varietal yellow Catuai from a small family run farm, just 2 hectares big. Everything is focused on quality; it is small scale, low intervention and kind on the land. This is a yellow Catuai prepared as a natural, with full drying in the sun - it is all meticulously done by hand, no mechanical drying, for guaranteed sweet flavoured coffee. With an annual production of 100 bags across only 2 hectares, Abna and Ana are focused on quality not quantity.
